Method
- Preheat oven to 450 F/220 C.
- Grease a large baking sheet evenly with olive oil.
- Crush pork rinds in a food processor.
- Transfer crushed pork rinds to a bowl and combine with Parmesan, chili powder, paprika, garlic and onion powder, oregano, thyme, and a pinch of salt and pepper.
- Beat eggs in a bowl.
- Dredge shrimp in eggs, and then coat in pork rind mixture.
- Lay breaded shrimp into the prepared baking sheet.
- Bake for 10 to 12 minutes.
- Serve hot.
